I can't believe it. I pulled a late night last night to watch Oprah that I had recorded from the four o'clock show. It was on kids and veggies. I was lovin it...since this past year I have been trying so so hard to get my children to eat better. I just want them to be healthy. I have bribed-begged-rewarded..you name it-I was ready to throw in the towel. Three weeks ago I shredded carrots and hid them in their pancake mix-it worked but I never imagined to puree tons of different kinds of veggies.
So today I had a photo shoot that required a pretty birthday cake. I decided to purchase one. While I was at the grocery I decided I would try the veggie idea to just see what would happen. I bought a butternut squash, a cauliflower, and spinach. These three things my children will not touch. Our menu tonight was already going to be white beans, mac and cheese, and mashed potatoes for dinner with brownies for dessert. I just used my same plain recipes but threw in the steamed then pureed veggies. It worked. They didn't get it. I never told them either. If I tell them they might not eat anything!
Thank you Oprah for the inspiration. I am so excited. On Oprah's website it has some of the recipes and what to do. I didn't use her recipes-I just used my own but added the great puree' veggies. I steamed the veggies in the microwave in my pampered chef steamer. It was really quick and easy.

I did get a few comments...like the butternut squash mac and cheese was a little too cheesy.
Mashed potatoes with cauliflower LB said they had a funny texture....B and C just ate and didn't say anything. I put 2 cups of spinach in the brownie mix. It changed them from really chewy to more cake like. They were so good! I am totally shocked that it worked. I ask the children while they ate if they would ever try butternut squash or eat some cooked spinach...They all said No way. Ha Ha Ha this is great

Don't your kids read your blog? I was so totally busted about the Pumpkin Patch. Lucy and Rachel read it at school and had e-mailed me to tell me they knew where we were going before they got home from school! Anyway, I love the spinach brownies! Yum Yum

Your poor tortured children. I am only glad my mother did not have Jessica Seinfeld in the 70's, or how on Earth could I have maintained my "I only eat processed, white, non-tasting food" thing I had going on up through the mid 80s? Poor babies. I am going to sneak candy into their food at our cookout on the 26th. Starburst hotdog, anyone?

Okay, They loved the butternut squash mac and cheese at our house, they thought it was better than normal. ( they knew the recipe had been adjusted!) The brownies were a little too cakey for me. Ella loved them, Molly didn't. William had been at basketball and when I asked him what he thought he asked if they were "healthy" Yes, I replied, do you taste anything. He sat and thought...SPINACH! He still ate two and wanted them packed in his lunch tomorrow. I didn't do the cauliflower. We have had mock mashed potatoes ( Just mashed cauliflower, no potato mixed in) when we were on Atkins and we still carry the scars. It was a NASTY experience.
Hey, mom used the spinach thing on us last night. she told us after we ate. Our family loved the mac and cheese though, it was the best!!

WHAT! WHAT is this? Your children are eating vegetables? This is sac religious! LOL, No NO NO, we prefer our vegetables in the purest form, unadulterated all natural. (LOTs of butter and sugar and if all else fails slap some mayonaise on it and down the hatch). LOL, Actually, my kiddos are really good about eating their veggies.::corn,broccoli, carrots,lima beans, peas and carrots, and cabbage, cauliflower is not that big of a hit in the house. There is not much you can put in front of my bunch that we dont eat up. Even if we dont like it, we will head for seconds. I am sure you couldn't tell that by looking at us? ::no comments from the peanut gallery::
